Chicken Pot Pie


I love Chicken Pot Pie and it's been unseasonably cool for us this week...so I think that I'll be making a comfort food favorite!  I use a similar recipe to this. I always use mini cookie cutters to vent the pie and Busy Bee loves to eat the cute shapes first. I find the cutest little cookie cutters in the crafts store near the modeling clay!

Cucumber Lemonade

I'm surprised that I'm sharing this recipe because a few years ago - this was my signature drink. :) The cucumbers add just a hint of flavor and cut the sourness in the perfect way. Pour yourself a tall, cool glass and stay a while!

Below is the homemade recipe that I follow, but you can always use storebought lemonade (Simply Lemonade is my favorite!) I promise not to tell!

Ingredients
3/4 cup sugar
1 cup water (for the simple syrup)
1 cup lemon juice
3 to 4 cups cold water (to dilute)

Method

1 Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely.

2 While the sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough for one cup of juice.

3 Add the juice and the sugar water to a pitcher. Add 3 to 4 cups of cold water, more or less to the desired strength.

Slice a frozen cucumber into lemonade! Enjoy! This amount Serves 6-8.

One of the first items that I bought for my kitchen starting out was a Williams Sonoma Juicer. I always heated my lemons for a few seconds and rolled them back and forth on the counter to extract the most lemon juice from them!

Homemade Slushies

Thanks to Ramblings of a Crazy Woman for this great idea!!

Yesterday was just Hot Hot Hot & a perfect day to try out this new trick! As my note states, we didn't have much luck making the grape pop into a slush... but when we replaced it with grape juice from juice pouches (hey, it's what we had to work with!), I'm happy to report that we had slush in a matter of minutes!

Here's what you'll need:
-2 zipper bags
-2 cups of ice
-1/3 cup of ice cream salt (no, not rock salt like Busy Bee's friend thought :) )
-3 juice pouches or similar amount of juice/lemonade

Pour the juice into the first bag and seal. Then place the sealed bag in the second bag and add the ice & salt around it. This is the fun part, take turns shaking it! This is where Busy Bee & her friend came in handy... Busy's Bee's favorite method was to jump up & down while holding the bag. You might want to wear winter gloves because it gets cooooooold fast!

We poured the frozen concoction into bowls and used silly straws to enjoy it! This got two thumbs up & we'll definitely do this in the future.

In the interest of full disclosure, I think that the pop would have slushified (is that even a word??) eventually as we saw signs of it starting to work!

Here is the result - granted it's a few minutes after being poured into the bowl. (I told you it was hot!) On a side note, don't you moms just love clear grape juice?

1-2-3 Fudge Sauce


Yum!! We enjoyed this oldie but goodie for Memorial Day!

Our power went off on the holiday, so we were figuring out a way to heat it up on the grill's side burner. Just then, the power flicked back on and the first thing out of my mouth was, "Heat up the fudge sauce!" for fear that it would go off again!

 I cringed too at the amount of sugar used in this recipe... but as with most sauces - a little goes a long way!

Busy Bee wanted to eat this from the container with a spoon and I don't blame her!
